Put the raw lentils into cold water. When the water is boiling, let it cook during 25 minutes. Drain and let it cool down.
Peel and cut the sweet potato into small cubes. Mix them with 2 Tbsp olive oil, salt and pepper. Pour the mix on a baking sheet and bake 15 minutes at 400°F (200°C).
In a bowl, mix the lentils, the sweet potato, the arugula, the parsley, the chopped cherry tomatoes and red onion.
Add 1 Tbsp olive oil, salt, pepper and the lemon juice. Mix well and that's it !
