Lentil salad with sweet potatoes
A salad full of colors and plant proteins !

- Put the raw lentils into cold water. When the water is boiling, let it cook during 25 minutes. Drain and let it cool down.
- Peel and cut the sweet potato into small cubes. Mix them with 2 Tbsp olive oil, salt and pepper. Pour the mix on a baking sheet and bake 15 minutes at 400°F (200°C).
- In a bowl, mix the lentils, the sweet potato, the arugula, the parsley, the chopped cherry tomatoes and red onion.
- Add 1 Tbsp olive oil, salt, pepper and the lemon juice. Mix well and that's it !
