Lentil salad with sweet potatoes
For a hearty salad filled with plant proteins, nothing beats lentils! Combine these legumes with roasted sweet potatoes, tomatoes, arugula, red onion, and you have a complete and colorful dish. Get started with our step-by-step instructions in both written and video format ;-)

Cook time40 min
Put the lentils and water into a pot and bring to a boil. Once boiling, reduce heat and let simmer for 25 minutes.
Drain and set aside.
Peel and cut the sweet potato into small cubes. Mix with 2 tablespoons of olive oil, salt, and pepper.
Spread the cubes on a baking sheet lined with parchment paper and bake for 15 minutes at 200°C (400°F).
In a bowl, mix the lentils, sweet potato cubes, arugula, chopped parsley, cherry tomatoes, and the chopped red onion.
For the dressing: Add 1 tablespoon of olive oil, salt, and lemon juice. Mix well and you're done!
