We've found one of our favorite salads this summer: Cucumber Salad with Super Crispy Smashed Potatoes ! Very easy to prepare, this salad combines fresh cucumbers with golden, crispy "smashed potatoes", creating a delicious balance of textures and above all an absolutely addictive hot/cold contrast. It's ideal as an accompaniment to main courses, as an original starter, or even as aside dish for a barbecue ;-)

  • Cucumber salad with crispy potatoes - Preparation step 1Boil the potatoes in boiling salted water for 20 minutes until tender (prick with a knife to check doneness).
  • Cucumber salad with crispy potatoes - Preparation step 2Place the potatoes in the tray of the Air Fryer with parchment paper and mash them with the back of a glass.
  • Cucumber salad with crispy potatoes - Preparation step 3Add a drizzle of olive oil, salt, pepper and the spices of your choice (we chose paprika and thyme).

    Bake for 20 minutes at 350°F/180°C on the "Air Fry" setting, turning halfway through.
  • Cucumber salad with crispy potatoes - Preparation step 4Meanwhile, prepare the cucumber salad by finely dicing the shallot, chives, dill and cucumber in a salad bowl.

How long can I keep this salad?

Cucumber salad is best when freshly prepared. However, you can store leftovers in an airtight container in the fridge for 1-2 days. The potatoes will lose some of their crispness over time.
This salad goes perfectly with grilled meats such as chicken, steak or fish. It's also ideal as a side dish for a barbecue, or as an original starter for a summer meal.
You can vary this salad by adding vegetables such as cherry tomatoes, red onions or radishes. For a richer, more gourmet version, add crispy bacon bits, lardons or chunks of cheese!
Of course! Place the potatoes on a baking tray, brush with oil and bake at 430°F/220°C for 25-30 minutes until crispy.
You can replace it with plain yoghurt or cream cheese, for example.
We recommend using fresh herbs as in the recipe, varying according to your taste with chives, basil or mint, for example.
