Long Run Preparation

My marathon training comes to a climatic peak tomorrow morning when at 6:00 am I plan to conquer the elusive 20 miler that has been staring at me since day one.


20 miles? Is it really that time already?!?! Ughh…


Come one Meghann! You can do this!!


At least those 20 miles looming over my head is as good excuse as ever to spend my Friday night sitting on the couch in my underwear watching Fa-la-la-la Lifetime and stuffing my face with delicious food.


Carb loading, right? ;)


I had a mini bag of kettle corn before leaving work.

I was at a loss on what to make for dinner.


In the spirit of carb loading my mind immediately went to a pasta or rice based dish, but both weren’t appealing to me at all. Instead I took some inspiration from one of my favorite bloggers and experimented with a recipe I have been meaning to try for a while.

Mama Pea’s Pumpkin Spiced Chickpeas

I can see what all the fuss is about – these chickpeas were great! They were slightly sweet, but not terribly overwelming. I bet they would pair well with some butternut or acorn squash. :)

Roasted potato simply seasoned with a grilling season and paired with ketchup for dipping. :)


For dessert, a serving of peppermint ice cream topped with chocolate covered graham cracker, and some chocolate/peppermint/M&M pretzels.

I also made some a panful of Pumpkin Coconut Chocolate Chip Bars for a Christmas party I am attending tomorrow night.

I’ll have to try one tomorrow to make sure they came out right. Let’s cross your fingers!


Still can’t believe I’m running 20 miles tomorrow morning!


I have strict orders to meet my sister at her apartment at 6:00am to get our run on.


Yikes!


I guess that means I better go to bed now.
