Tofu praram long song (tofu with peanut sauce on a bed of spinach)

- 1 14 oz of coconut milk
- 2 teaspoons of red curry paste
- 1 tablespoon of honey
- 1 tablespoon of pad thai sauce
- 1/4 cup of creamy peanut butter
- 1/4 cup of chopped peanuts
- 1 package of tofu, cubed
- 2 tablespoons of vegetable oil
- 1 bunch of spinach leaves or broccoli florets
- red chili flakes


Step 1

Simmer coconut milk and curry paste in a sauce pan until oil starts to come up on top.

Step 2

Add honey, pad thai sauce,peanuts, and peanut butter and simmer until thick and creamy.

Step 3

In a non-stick frying pan, brown tofu on all sides and set aside.

Step 4

Combine the tofu in the sauce and mix well.

Step 5

Place the spinach leaves on a serving platter and pour the sauce on top.

Step 6

Sprinkle with chopped peanuts and red chili flakes.
