Low-Fat Blueberry Bran Muffins
I haven't blogged in forever?this winter has really dragged me down. But I've gathered my resolve and am sharing this blueberry bran muffin recipe. These are delicious, and I must admit I was pleasantly surprised?they are low fat! Of course, probably not so much so if you eat half a batch in a day... I pretty much just followed a recipe that I found at bigoven.com: Low fat High Fiber Blueberry Bran Muffins LOW-FAT BLUEBERRY BRAN MUFFINS Ingredients 1 1/2 c wheat bran 1 c nonfat or low-fat milk 1/2 c unsweetened applesauce 1 egg/egg substitute 2/3 c brown sugar 1/2 tsp vanilla extract 1 c flour (1/2 wheat, 1/2 all purpose or a whole grain mix) 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1-1 1/2 c frozen wild blueberries Directions Preheat oven to 375 degrees. Mix together wheat bran and milk, and let stand for 10 minutes. (go ahead to the next step while you wait). In a large bowl, blend together applesauce, egg, brown sugar, and vanilla. Add bran mixture and beat well. Mix flour(s), baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in blueberries (don't worry about any ice crystals). Fill greased muffin pans/liners 3/4 full (paper liners REALLY stick if you eat them warm). Bake for 15 to 20 minutes (until tops spring back when lightly tapped).
