Marshmallow Fluff Made With Real Food?!

While menu planning this weekend I came upon something that I absolutely must share.  I was perusing some of my favorite blogs on a hunt for new recipes to try, when my eyes settled on the words  "....Marshmallow Fluff Without Corn Syrup"  Huh, what?!  I immediately thought of everything I could make with marshmallow fluff, stuff that had been stricken off the list when we started converting to real food.





Here are the ingredients for the kind you'll find at your typical grocery store:  Corn Syrup, Sugar, Water, Egg Whites, Artificial Flavor, Cream of Tartar, Xanthan Gum, Artificial Color.  Yummy, artificial flavors are so delicious!  And artificial colors?  More, please!


Here are the ingredients for real food fluff:  egg whites, vanilla, natural sweetener, salt.  Which would you rather eat?  (Hint:  the answer is "the second one.")
The family was so happy to be able to enjoy a fluffernutter sandwich!  (Peanut butter and marshmallow fluff.  "Fluffernutter" even sounds fun.  Try to say it 10 times fast.)  The taste is a little different.  I chose maple syrup for my natural sweetener and the flavor is definitely detectable.  It's not unpleasant in the least, but if you are expecting an exact replica, you're going to be a tad disappointed.



I plan on experimenting with some discarded recipes that call for marshmallow fluff (ok, you caught me.  I didn't actually discard them.  I just put them way up high where I would have to climb on a counter to reach them.)   I think they'll be easy to adapt.  You know you're a nerd when you get excited over something like this!







And in other news, for those who keep up with Griffin, I have added another food allergy to his ever growing list.  Corn.  Instantly, I mean right after his first bite, he broke out in hives.  I had not been giving him grains and I decided to let him have the rice spaghetti noodles that the rest of the family was eating.  It was the only different food so it had to be the corn.  At least I know now.  This one really bums me out.  Corn is in ALOT of things.  Do you know that the wax used to seal produce can contain corn (You did know that your apples were covered in wax, didn't you?  One more reason to visit your local farmer.)  Even foods labeled "organic" can have corn in them.  No one has to put a "corn allergy" alert on their label.  Like I said it's a bummer.  So my littlest guy cannot have gluten, dairy, chocolate....  and now corn.  Boo!
