Martha Stewart's Gingerbread Cupcakes with Gingerbread Cutouts
Although I am not "officially" a member, I have decided to bake along with the Martha Stewart Cupcake baking people.
It's another group that gets a book and selects different things in it to cook and discuss and blog. This is a fun thing to do! If you enjoy the process, it makes it more enjoyable to share it with like minded people. I share my enthusiasm with my DH and he tries very hard to be attentive but I can see the glassy eyed look I get. Belonging to a baking group means he doesn't have to act interested and he gets to eat some new and hopefully tasty things. This Martha Stewart Cupcakes book has "175 inspired ideas for everyone's favorite treat". I'll say! I've always been a Martha fan. Since way back. When her show first came on and the only way you could get the recipe was to write it down while you watched! Yes, before the website! Back then you had to be careful which recipe you wanted to try though because she has a way of using some obscure and hard to find things! And I remember trying to find some particular ingredient to make some particular recipe and since I have to follow a recipe to the letter Things are easier to find today and the internet is full of sources for things and sites that tell you what you can use "in place of". This month's recipe was for Gingerbread Cupcakes with Gingerbread cutouts. It has no obscure or hard to find ingredients. Meet Gumby! What it does have is butter. A lot of butter. So much butter my arteries were hardening as I read the recipe. Don't get me wrong, I love me some buttah and have been know to use the real thing but I've got to draw the line somewhere! Oh, and I'm not really a fan of gingerbread. These kinda started off with 2 strikes right off the bat. That being said, these cupcakes were good. Oily from all the buttah and the batter was so thick(again fron the buttah) I decided to pipe it into the cupcake papers to bake. And the frosting had lots of butter. I love frosting the best. This was very good frosting. Lots of buttah! No substitutions please! The cookies were supposed to be made with a 2" gingerbread man cookie cutter. Really Martha? 2"? 2" so you could make your cupcakes look all "Martha-ey" by standing the little guys on top of the cupcakes. And the cookie recipe made 5-6 dozen! I halved it and still had way too many gingerbread Gumby's! And I used my giant 4" cookie cutout so as to avoid any possible meltdowns trying to find a 2" one. I have bigger fish to fry! These were good, not too gingerbread flavored. Next time I'm not using butter in the cupcake batter. Applesauce will work just fine and cut out the fat and I bet it makes a nice flavor impact on them! Are you a gingerbread eater? baker? house builder? related searches : Martha
