Meat Geek

By AlbuKirky BBQ & Other Stuff (Visit website)

I recently came to the realization that I?m a meat geek.  My moment of clarity occurred last Friday.  I had gotten off work early and instead of doing something like enjoying the nice weather or hitting some golf balls and working the rust out of my golf swing, I made a B-line for the bastion of super size consumerism, Costco.  As usual I got a cart and headed straight for the meat section, no lolly gagging in the electronics section or stopping for any food samples either, I was on a mission.

I scoured the beef filled cases for 20 minutes looking for a 10lb bone-in prime rib roast, nada.  After making one last effort to find a bone-in roast, I asked the butcher if they had any.  I was informed they only have them at Christmas.  DAMMIT!

Prime Rib on the Big Green Egg
So my only choices were a 6lb boneless or a 15lb boneless whole packer roast. What a dilemma, 6lbs of beefy goodness or 15lbs?? Although the total price was higher, the 15lb hunk-o-beef was a $1.30/lb cheaper.  Not only am I saving money, I look really manly dropping that side of meat on the checkout counter.  I?m pretty sure I saw the check out lady ogling out my bulging biceps when I hoisted that small cow onto the conveyor belt.

Sliced Prime Rib
You've probably noticed that the roast looks a little small for a 15lbs.  Actually, I only cooked 1/2 of it.  The other 1/2 is sitting in my freezer waiting till I start jonezing for prime rib again.  My new mantra... buy once, cook twice.  So there it is, my confession.  They say confession is good for the soul, in my case it tastes pretty good too!  Beef, it's whats for dinner!
