Mock Meatloaf, Mashed Potatoes with Gravy and Baby Broccoli....YUM

Happy Hump Day~!  The forecast of more tornadic storms for last night called for a hearty dinner!  I made Happy Herbivore's Mock Meatloaf last night, and it was out of this world!  I found the recipe here.  The recipe called for cooking the loaf for 1 hour and 30 minutes, but I was very impatient and about to starve, so mine only cooked for about an hour and 10 minutes.  It was done, but it fell apart as I was transferring the perfectly cut slices to my plate.  That's okay though, because it was delish.  It was vrey moist and the seasoning was perfect.  The next time I will try to be patient and leave it in the oven for the full time, because the recipe says to.  :o)   

I've been craving homemade mashed potatoes lately.  So, while the loaf was cooking, I peeled and chopped up a potato and put that on to boil.  When the potatoes had finished cooking, I drained them and transferred them to a glass bowl.  I half way mashed the potatoes up (I wanted it sorta chunky) and then mixed in some vegan butter, a little soy milk, salt, pepper, and a little nutritional yeast.   I also cooked some baby broccoli, that I finally found in the grocery store.  I was going to steam the broccoli, but decided to lightly saute it in some olive oil and garlic.   It was heaven....Actually, supper was heaven!


When I came across the Mock Meatloaf recipe, I also came across Happy Herbivore's Brown Gravy recipe that can be found here.  It sounded like it would be perfect to go on top of the potatoes and loaf.  I was totally amazed at the gravy...I couldn't believe how much it tasted like the real thing.  Since I've only been a vegan for over a year, I remember exactly what the original brown gravy tasted like, and Lindsay's recipe was dead on. 


I can't wait until Happy Herbivore is back in stock at Amazon.   I'm so grabbing it while I can!  I have a feeling that it will become one of my favorite cookbooks.
