My Big Fat Greek Salad

This morning I woke up hungry, craving french toast and breakfast potatoes. Unfortunately, I didn't have time to make my dream breakfast. Instead, I ate a bowl of Kashi cereal (1 C.) with soymilk (1/2 C.) and slices of banana (1/2 of one). While pouring the cereal into the bowl, I realized that the 250 calories that I would get from it wouldn't be enough to get me through until lunch, so I decided to have 2 small slices of rye bread. I toasted and then spread a little Smart Balance on them. I like to dunk my toast into the cereal milk- it sounds gross, but it tastes good! Well, at least to me anyway!!


I was running around this morning so I didn't have time to pack my lunch. :( Luckily, the cafeteria was serving a salad that I had tried before and liked. I ordered the Greek salad-- a bed of romaine lettuce, penne pasta, tomatoes, cucumbers, feta cheese, red onions, huge pieces of artichoke and a cucumber dressing. It also came with a piece of olive bread. To drink, I got a Honest Tea... the Peach White Tea flavor. I like Honest Tea because its not too sweet but just sweet enough. Plus, I love that it's organic made with cane sugar instead of high fructose syrup.


I also had 6 of these raw almonds for my afternoon snack...


Prashant made homemade beans and rice last night. They were so delicious and healthy-- he even added a huge bunch of kale to the pot... a perfect way to sneak more greens into our diet! While eating them last night, I kept on thinking about how yummy the beans and rice would be as a burrito filling. So, that's what I did for dinner tonight! In a bowl, I first mixed the beans and rice together. Then I warmed a ww tortilla, spread the mixture on top, and sprinkled it with some pepperjack cheese and salsa. OMG, this was an awesome burrito!


Dessert... I've had severe sugar cravings this week- it was either this or go out in search of apple pie. Like I said, severe sugar cravings!


Okay, I don't know what to do... I'm full and I don't want anything else to eat, but I can't stop thinking about sweets. Ugh! I curse my fluctuating hormones...

Alright, good night... I'm off to think (dream) about yummy chocolate treats!
