In a big pot, melt the butter with the olive oil
Add the minced onion, carrot and celeri stalk, and cook for a few minutes.
Then add the minced beef, and cook it. Add the shredded pancetta.
Add the minced pork, and cook a few minutes.
Pour the red wine. On the side, mix together the concentrated tomato with the beef stock, and pour it in the pot.
Finally, add the tomato pulp and mix well.
Simmer for 2 hours at low heat without covering. Mix once in a while.
Serve with al dente pasta, and some grated parmesan. There you are !
