Preheat your oven to 350°F. Place the salt and then the flour in a kneading machine. Make a hole and put the fresh yeast in it (make sure it does not touch the salt!). Add the olive oil and the water, and knead it during 5 minutes.
Let it rest at room temperature during 1 hour.
Then, spread the batter into a large and thin batter.
Add the cooked onions and bacon on the half of the batter letting a border.
Fold the batter in half and put the borders together.
You can now do the shape you like.
Put your batter on a baking sheet and brush an egg wash on it.
Cut some creases in it. You can make them big so you can see it better after baking it.
Sprinkle some bacon and cheese on it and let it rest during 20 minutes at room temperature.
Put it on the oven at 350°F during 20 minutes.
There you are, your fougasse is ready !
