My Mom Making Homemade Pasta - Basic Egg Recipe
For 3 to 4 servings: 2 1/4 cups of all-purpose flour 3 eggs Put flour on a pasty board and make a well in center. Break eggs into well; beat with a fork. Draw some flour from inner rim of well over eggs, beating constantly. Keep adding flour a little at a time until you have a soft dough. Put dough aside. With a pastry scraper, remove bits and pieces of dough attached to board. Lightly flour board and your hands. Knead dough 10 to 12 minutes, adding flour a little at a time until dough is smooth and pliable. Insert a finger into center of dough. If it comes out almost dry, dough is ready for pasta machine. If dough is sticky, knead it a little longer adding more flour. Set rollers of Pasta Machine I usually make homemade pasta in the winter time. I make mine with whole-wheat flour and I sometimes add spinach or other veggies and spices like pepper and basil. You can make all types of pasta. I have the basic manual pasta machine like this one. I then decided I wanted an electric one, but bought a cheaper one. I first I was so amazed by it...so neat not having to knead the dough manually.....so quick! It ended up breaking though - I think because I was making whole-wheat which makes the machine work harder. I'd buy a higher end model if I ever do buy one again. For now, my manual works perfect! and as far as the kneading goes....my boyfriend will do that part. This is the electric one I have.
