Passion fruit, oh so cute.
This is the kind of cake you'd make on a desert island (if you had a kitchen). The cake part of the recipe is a basic vanilla sponge with some added passion fruit juice. I made two tiers because since making the epic cake, a one tiered cake is not enough. If you just wanted to make one tier though, you could halve the recipe. Use two 8-9" cake tins for this one. You'll need: 4 cups self raising flour 2 tsp bicarbonate of soda 1 cup of sugar 1 1/2 cups of sunflower oil (this makes sure it's super moist) 2 cups soya milk 4 tsp vanilla extract 1/2 cup of passion fruit juice. To get the juice out of the fruit, put a sieve over a bowl, scoop out the insides from the fruit and with the back of a spoon just keep pushing on the seeds. When you pick up the sieve all the juice will have gone though. One passion fruit makes about half a cup of juice. When you've got the juice out, put the seeds back into the fruit to save for later. To make the cake, sieve together the dry ingredients, then add the sugar and gently mix. Make a well in the centre for the wet ingredients then add the oil, milk, vanilla and juice and mix until there are only small lumps left. Line and grease your cake pans then pour half the mixture into each one and bake at 180C/350F for around 15-20 minutes. Check it after 15 by sticking a knife in, if it comes out clean, it's cooked. Right, the best bit, the frosting! This is simple aswell, just the basics. You'll need: 1/2 cup vegan margarine 3 cups of confectioners/icing sugar 1/2 cup of passionfruit juice and some of the leftover seeds Just beat together the margarine and the sugar, then add the juice. If it's too runny, add more sugar, if it's too stiff add a touch of soya milk. The cakes should be done by now so take them out of the oven and leave them to cool on a wire rack while you clean up/read a magazine/invite people over for cake. Once they're cool it's icing time! Get out your palette knife, or a flat flexible spatula and ice the top of cake number one. Leave it to set for a few minutes, then put cake number two on top and spread the remaining frosting on top of that. Garnish with a few of the extra leftover seeds and then put it in the fridge for a couple of hours to completely set. Seriously tropically delicious. related searches : Passion
