Picnic, Hike, Good Belly and Cranberry Fest

Good Evening!



We have had a great weekend and although I am sad that is coming to an end I am looking forward to getting everyone back into their routines (including myself) and gearing up for the next holiday.  One of my goals for this weekend was to get everyone outside and to enjoy the great weather that we are having right now.   On Saturday, we ended up going back down to Zilker Park and taking the kids to the Austin Nature Center.  The kids loved it and there was also some fun trails to hike as well.

After all the hiking we sat down for a little picnic.  We always talk about doing that but never do and we had so many leftovers in the house  that it would be a shame to go out to lunch.  I made the best leftover turkey sandwich ever.  We had picked up some Pola Ashy Rind Goat Cheese at Whole Foods that is absolutely amazing and really took the leftover turkey sandwiches to the next level, that and the  use of the Cranberry Walnut Bread. Wow!

And enjoy!  Yum- the combination of the tart cranberry bread with the tangy goat cheese and smoked turkey was truly wonderful.   I made the kids plain turkey sandwiches on Sourdough.  They are not into the goat cheese and cranberry bread yet!



A few clementines and a bag of homemade Chex Mix rounded out the meal.

Today has been a busy day with church and then  squeezing a round of golf in before the rain came down.  My son Emmet loves fresh cranberries and wanted me to make him Fresh Cranberry Muffins to take to school for snack this week.  Of course, I was happy to oblige and it was a perfect afternoon to bake.

1 1/2 cup whole wheat pastry flour1 cup all-purpose flour1 1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1 tsp cinnamon
2 large eggs1 cup nonfat buttermilk2/3 cup brown sugar2 tablespoons unsalted butter, melted2 tablespoons canola oil1 teaspoon vanilla extract1 teaspoon freshly grated orange zest2 cups chopped cranberries, fresh (chopped in a food processor)
1/4 cup of sliced almonds for garnish
PreparationPreheat oven to 400°F for muffins.Coat pan with cooking spray.Prepare Dry Ingredients in bowl- first 6 ingredients
Whisk eggs, buttermilk, brown sugar, butter, oil and vanilla in a large bowl until well combined.Make a well in the center of the dry ingredients, pour in the wet ingredients and stir until just combined. Add orange zest and cranberries. Stir just to combine; do not overmix. Transfer batter to the prepared pan. Top with sliced almonds, if desired.Bake until golden brown and a wooden skewer inserted into the center comes out clean, 22 to 25 minutes for muffins. Let cool in the pan for 15 minutes, then turn out onto a wire rack. 


Emmet said they were awesome!  I have not tried one yet but heard that they were tart but tasty!




This is a great use of fresh cranberries and am going to buy a few extra bags of fresh cranberries and freeze them because once this season is over it is really hard to find them and I love them!

Time to get the kids showered and ready for bed.  I hope everyone had a great Thanksgiving and I am looking forward to getting my 2.2 pounds off in the next few days.  I will share my own ups and downs of maintaining/losing weight during this holiday season especially with all the temptation around.  I have so many things that I want to bake for the holidays but I swear I will blow up if I don't keep myself in check.  I have worked out the past two days but the scale did not budge this morning so I will be working off those pounds and then just trying to hold steady during the holidays.  Fun, fun!
