Grandma’s waffle cookies

2 sticks unsweetened butter, softened

1 cup sugar

1 egg white

2 cups flour

1/4 teaspoon baking powder


  • In a medium bowl with a mixer (you can also use stand mixer) cream together softened butter and sugar. When the mixture is fluffy and creamy add in 2 whole eggs and 1 egg white. Mix everything together until smooth.

    Add flour and baking powder to the wet ingredients. Mix until everything is well combined.

    Heat a waffle maker until hot.

    Add cookie batter to the centers of waffle maker and cover. Lightly coat grids with cooking spray. Spoon batter onto center of each waffle maker square to make 1 1/2-inch rounds. Close cover; cook until set, about 1 1/2 minutes.

    Transfer to a wire rack, bottom sides up. Let cool completely. Repeat with remaining batter, coating grids with cooking spray after each batch.

    Serve with milk, tea, fresh fruit or just as is!
