For the cookies :

2 cups flour
2/3 cup butter
1/2 cup brown sugar
1 egg
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger

For decoration :

Icing (homemade or store-bought)
Colored chocolate candies (Smarties type)

To begin, combine butter and sugar.
Add egg.
Add flour, salt, cinnamon and ginger.
Place the dough on cling film.
Form into a ball, then wrap in cling film.
Refrigerate for 1 hour.
Flour the table.
Roll out the dough to about 1cm thick.
Cut out figures using the cookie cutter.
Place the gingerbread men on a baking tray lined with baking paper.
Bake for 7-10 minutes at 390°F/200°C.
Now it's time to decorate! Use icing and candy to make the decoration of your choice.
