My kitchen is too small for me and it's utterly frustrating! grrrr....well, before I rant & rave let me greet you all Well, as is expected of me at this time of the year, i whipped up meals for Christmas and for a change i decided to go for an all Filipino menu which I have decided to post below with their recipes:A Merry Christmas & a Happy 2011 :) Sweet & Sour fish (fried Taraki fish with sweet and sour sauce) Fish of your choice- whole fish (cleaned & gutted of course) or fillets--> rubbed with salt to taste & fried *Sweet and sour sauce: 1/2 can pineapple chunks 1 large carrot & a knob of ginger, peeled and cut into julienne strips 2 celery stalks, cut 1 onion quartered red & green capsicums (bellpepper) ----> In a saucepan, boil 2 cups of water + ginger + onion + pineapple juice + 2 tbsp. light soy sauce + 3-4 tbsp. sugar & salt to taste...then add the veges...let simmer & toss in 1/4 c of water with 2-3 tbsp. dissolved cornstarch to thicken sauce. Simple, that is it. If sauce is still a bit on the tangy side just add more sugar to balance the flavour. Dribble in some sesame oil if you like too. *Plate the fish and pour this on top. Serve hot. *Beef Caldereta (an all time favourite-recipe which can be found in my archive, just type it in the search box, thanks) Pansit Palabok (a vermicelli type of dish with sauce and toppings of chopped boiled egg, spring onion, tofu & crackling) will post this soon :) Buko Pandan (cubed, pandan flavored jelly with soft scrapes of young coconut meat and cream, yum!) Unflavoured gelatin, 2 packets of 220 gms. each 2-3 cups of young coconut meat, may be fresh or frozen (thaw first!) pandan leaves or flavouring 2 cans of reduced cream 1/2 can of condensed, or may be sweeter- it's up to you... *Boil 2 1/2 cups of water, toss in gelatin & pandan leaves so the flavour could saturate OR just add a tbsp. of pandan essence/flavouring (which can be bought in asian specialty stores) TAKE OFF HEAT, cool a little and pour into a rectangular or square pan and cool some more allow to set- you could put it in the fridge to quicken this process... In the meantime prepare a bowl and combine coconut, cream and condensed milk, blend well & refrigerate. You will then cut the jelly into cubes (once set) & toss them in the cream-coconut mixture. Chill overnight for an absolutely perfect yuminess! hmmm-hmmm. I know, i know- most of these sound foreign to you but if you have Filipino friends you have probably tried one of our dishes, as we are known for our love for food (wink!). I'm not too sure if you want recipes for these but i'll still post them anyway. They are really good recipes to try too especially if you want something different for a change.
