POM Wonderful pomegranate light desserts
Last week, lots of nice things happened to me. One of them was receiving 8 bottles of POM Wonderful 100% pomegranate juice to try. Thank you, Molly, for recognizing my blog and sending me the pomegranate juice. I happen to like pomegranates. After my family tried them, Jackie who is three, proclaimed that the juice was just wonderful. Only four cute bottles remained for me try fun desserts. I am going to start out with the favorite from my taste testers. I do not have a name for the dessert really except pomegranate fluff. It is the one with the blue berries on the bottom. 1 1/2 cup cold cream (whipped until soft peaks form)1/2 cup sugar 1 package of unflavored gelatin 3 Tbs cold water 3/4 c POM Wonderful pomegranate juice 1 cup blueberries Add sugar to the whipped cream and whip the cream until soft peaks form. Mix 1 package of unflavored gelatin to the 3 Tbs of cold water. Heat the gelatin mixture on high in the microwave for 15 secs. Add the mixture to the pomegranate juice and stir thoroughly. Add gelatin and pomegranate mixture to whip cream and whip it for 5 more minutes. Fold in 3/4 cup of blue berries. Save the 1/4 of blueberries to fill at the bottom of the shot glasses and put the pomegranate fluff and serve. Next time, I will try to make it with POM Wonderful pomegranate/blueberry juice. The next dessert is super simple, it's basically a pomegranate juice jello. I made one with blueberries and and one with strawberries. Some of the tasters thought this was too sweet so I would cut back the sugar to 1/3 cup. 1/2 c water 1/2 c sugar (could be cut back to 1/3 cup) 1 pint of strawberries (hulled and sliced) or 6-7 blueberries in the shot glass 1 1/2 tsp unflavored gelatin 3/4 c POM Wonderful pomegranate juice Dissolve sugar in the water on low heat. Add the gelatin to the pomegranate juice then add to sugar syrup. The first time that I tried the recipe, I added the strawberries to the sugar syrup. They flavored the water but made the strawberries too limp. The second time that I tried it I added the fresh blueberries to shot glasses and did not cook the blue berries.
