Post Mortem on Poulet Sauté Chasseur
This dish, aka Poulet Sauté Sauce Chasseur, is not to be missed so don't be late to the dinner table!! I think it's one of those great classic/traditional dishes that are relatively easy to prepare, the aromas of which are to die for and its presentation simply superb. I know those of you who attempted to cook this dutifully dipped into your sacred stash of cognac and still have your eyebrows intact. All is well with the world then. These dishes as you have most likely already figured out are all about basic bistro which is basic home cooking. I am not out to grill a cucumber, swizzle some sauce all around the plate and flick some parsley and call it a mighty culinary creation. Sorry, I don't buy into that, never have never will which just shows you how ill bred and boorish I truly must be. No matter how elegant a dish may be in its preparation, mes amis, if it tastes like yesterday's mowed grass gently placed on an imported piece of cardboard or worse if the main dish looks like an appetizer (on the kiddy menu), then I suggest you run away from there as fast as your little feet can possibly take you. All that aside, great dish and a wonderful assortment of flavors all washed down with a bottle of '07 Chinon. I wish I could wax more elegantly than I have or could have but with food, I suspect, the more one goes about it the less one cooks and I for one do not want to be placed in that column.
