Chicken and avocado quesadillas
Travel to Mexico with our homemade quesadillas recipe! Filled with chicken and avocado, you'll love these little triangular sandwiches! Very easy to make, this recipe will give you the chance to use wheat tortillas in a different way than for fajitas ;-) The perfect dish to add to a platter or share with friends while watching a movie or game ;-)

Finely chop the peppers and onion. Sauté them in a pan with a little olive oil.
After about 5 minutes, add the finely chopped chicken and crushed garlic.
When the chicken is cooked, season with salt and pepper, and add the tomato sauce. Mix well and remove from heat.
In a large pan over medium heat, place a wheat tortilla. On one half, add 2 to 3 tablespoons of the chicken filling.
On the other half, sprinkle a generous handful of grated mozzarella. Cut avocado slices and place them on the filling. Cook until the mozzarella melts.
Fold the half covered with cheese over the filling. Remove from heat and cut the resulting half-circle into 4 pieces.
And there you have it, your quesadillas are ready!
Observations
Chicken: You can replace it with tuna, beef, or omit the meat for a vegetarian version.
Cheese: Here we used mozzarella, but you can also use grated Emmental.
