- Prepare the grapefruit: cut off the base and the top. Peel it and remove the remaining white membrane. Retrieve the segments of pulp with a knife, chop them into small pieces, and set aside. Squeeze the remaining grapefruit to extract the juice.
- Shell the shrimp and chop them into small pieces. In a bowl, mix the shrimp, grapefruit, its juice, olive oil, juice of 1/2 lemon, paprika, and salt. Chill in the refrigerator.
- Cut the avocados in half, remove the pit, and scoop out the flesh. Blend it with the juice of the other 1/2 lemon and salt.
- Assemble the verrines: place a few spoonfuls of blended avocado at the bottom of your glasses and top with the shrimp and grapefruit mixture. Chill until serving. Enjoy your meal!
