Observations

What do the advertised portions correspond to?
If you're used to eating "poulet crousty", you'll be familiar with the astronomical quantities that are best suited to big eaters. Here, we've made sure you eat the right portions. You can make the same recipe (indicated for two people) if you're really hungry ;-)

How to make homemade breaded fillets?
We give you an air fryer recipe here and an extra crispy KFC-style recipe for the deep fryer here.

How do I make homemade fried onions?
We give you the oven recipe here and the air fryer recipe here.

How do I store crousty chicken?
Let it cool completely at room temperature (no more than 2 hours). Store in the fridge for up to 2 days, in a tin with the lid ajar (be careful not to use a completely airtight tin, which will soften everything).

How best to reheat crousty chicken?
It's best to separate the rice from the chicken. Reheat the rice in the microwave and the chicken in the oven or air fryer. You can also put everything in a frying pan to reheat.

What can I use instead of breaded chicken?
Yes, we know this is a chicken crousty recipe, but if you want to vary, you can also make it with breaded shrimps (or even vegetable breaded shrimps if you're vegetarian) and it's bound to be delicious.

Can I replace the sauce on the crousty chicken?
Here we used our homemade sauce and sweet and sour sauce. You can also use sriracha mayonnaise!

What can I replace the chives with?
You can replace it with parsley, or even coriander if you like it!

Which rice to use?
We've used Thai rice, but you can also use basmati rice. It too needs to be cooked in 1.5 parts water.

To simplify rice cooking:
Fill a glass with rice and pour it into the saucepan. Fill the same glass again, but with water. Pour it into the saucepan. Fill the glass with water again, but only halfway. Add it to the pan and cover with the lid. Turn on the heat to medium and turn off after 10 minutes.

Can I use rice that has already been cooked?
You can reuse leftover rice, for example, and reheat it at the last minute, or use packets of cooked rice to heat up in the microwave (follow the instructions on the packet).
