Peel and cut your potatoes into fries.
Soak them in water for 5 minutes to remove starch and make them crispier. Dry them well with a towel.
Fry them once in hot oil (285°F / 140°C) for 8 minutes. Remove them and let them cool.
Then fry them again (350°F / 180°C) for 8 minutes. Remove them and sprinkle with salt.
And there you have it, your homemade French fries are ready!
Observations
Potato variety: Prefer starchy potatoes, the favorite in this area is the Bintje, but you can also use Agria or Artemis, both with a nice yellow flesh.
Frying oil: The most suitable oil for high-temperature cooking is peanut oil. This vegetable oil is perfect for fries.
