No-knead french baguettes
Craving a delicious baguette? Skip the bakery step and make it at home! With this quick and easy recipe, making your own bread will be a breeze! You won't resist the crunch of this baguette and the softness of its crumb :-) Don't forget to save some for breakfast. With a touch of butter and/or jam, this baguette will start your day with a smile :-)
Ingredients
For 2 small baguettes:
Materials
- Baguette mold (optional)
Preparation
In a bowl, put the flour and salt, and make a well in the center. Add the crumbled yeast (it must not touch the salt!). Pour in the warm water.
Mix roughly with a spoon until you have a sticky and lumpy dough. Let it rise for 1.5 hours at room temperature.
Place a sheet of parchment paper on your baguette mold (or directly on a baking tray to make loaves). Pour the sticky mixture, dividing it into 2.
Using scissors, make 3 cuts on top of each baguette.
In a baking tray, add some water, and place it underneath the rack that will hold your baguette mold. The presence of water is essential during baking, as the steam will help form a crispy crust.
Preheat the oven to 230°C (445°F) and bake for 30 minutes.
And there you have it, your no-knead baguettes are ready!
Observations
Dry Yeast
If you are using dry yeast, you need 1 packet for this recipe. It should be dissolved in 1 tablespoon of water for a few minutes to rehydrate.
Convection Heat?
If you want a well-cooked bread, you can set your oven to convection heat. If you prefer it a little less cooked, natural convection will be suitable.

Just made this. Very easy. I converted the recipe to use dry active yeast and used 2 scant Tablespoons. Simple, quick and the family loved it. I’ll make this often. Thank you for sharing this recipe and video.
