Reheat and eat ? spiced tomato meatballs
I made my first ?tool? purchase today?. Yes that would be a staple gun. Just call me Bob. Of the Builder variety ;) While yesterday I wrote about what books I am currently reading, ironically I doubt I will get any reading done this evening. ?Why?" you may ask? Because it dawned on me that the next few weeks are going to be CRAZY busy. For example - in two weeks we are hosting a dinner party for my 30th birthday. Of course, being the restrained person that I am, I am keeping it low key. Yeah right. So far 36+ people have RSVP'd yes - so that is 36+ mouths to feed. Dinner party style. Then there are the decorations to organise. And the beds to arrange for the 7 guests that will be staying with us. Oh and did I mention that we are hosting a mother's day lunch at our place on Sunday, and will be away interstate the following weekend? Fun times ahead - but perhaps no so fun if we dont get out butts into gear and get organised!! And, as they say, why put off until later what you can get done today! So, tonight after work I took advantage of the late night shopping 'across the border? and picked up more items for the party and also for a few craft projects. Because why not add a few 'craft projects' to an already overflowing to do list lol. Thankfully, I had dinner waiting for me when I got home ? spiced tomato meatballs that I actually made for dinner last night (and the serving size yielded enough for two nights!). All I had to do was reheat and eat! The dish was really easy to make. Starting with the balls... Minced lamb, garlic, ginger, salt, garam masala, green chilli and fresh coriander. Processed until smooth then rolled easily into 18 balls. Next, the rich tomato sauce... Combining spices and tomatoes to create a rich luscious sauce. In go the meatballs..... Covered with foil.... And simmered for 40 minutes. Tonight, as I mentioned, it was just a matter of "reheat and eat". Starting with a bed of spinach and beans.... A spoonful of brown rice.... And topped with the flavour-packed meatballs... To which the coriander was definitely a winning addition. I was really pleased to find out that the meatballs had remained moist and tender after re-heating (and had not dried out as meatballs often d0). Gotta love a "reheat and eat" speedy weekday meal. Now where did I put my staple gun...... ____________________ Day 15 - MOVE it, TONE it, DRINK it MOVE it - Body Pump (1hr) ? and I think I sprained my wrist a little? Lame. TONE it ?
