  • Put all ingredients in the bowl of a mixer and using the dough hook attachment, mix for about 5 minutes. Form dough into a ball and let rest for 10 minutes.
  • Lightly flour the counter and roll dough out into a thin sheet.
  • Cut pasta into long strips and roll so that you have tubes. Slice tubes into 1 piece and press down with your thumb.
  • Drop pasta into lightly salted boiling water and cook for about 4 minutes. Remove from water and toss with the sauce and meatball recipe below.
  • Mix together the turkey, spinach, egg, cheese, half the onion, garlic, and salt and pepper and form into golf ball size meatballs.
  • Line a baking sheet with aluminum foil and drizzle with olive oil. Place the meatballs onto the baking sheet and bake for 15 minutes at 350 degrees.
  • While meatballs are cooking, sauté the other half of the onion in olive oil until soft. Add the can of tomatoes and oregano and season with salt and pepper. Turn sauce to low and add the meatballs. Cover and allow to simmer for about 10 minutes.
  • Once sauce and meatballs are done, toss with the fresh pasta and top with the parsley. Serve warm and enjoy!
