Homemade pumpkin spice syrup, perfect for your fall/winter drinks
Transform your pumpkin purée into a delicious pumpkin spice syrup to enhance your drinks! With its notes of cinnamon, ginger and nutmeg, this syrup will be perfect for making the recipe for the famous "Pumpkin spice latte", a delicious latte made famous by Starbucks coffee shops :-) It can also be a nice homemade gift idea. Preparation
- For the pumpkin puree:
Roughly cut pieces of pumpkin and immerse them in a pot of boiling water.
Cook them for about 20 minutes (or until the pumpkin is soft when you stick the tip of a knife in it). - Drain the pumpkin pieces and blend them until you obtain a smooth puree, set aside.
- Syrup:
Combine the sugar and water in a pan and bring to a boil. - When the sugar is well dissolved in the water, add the cinnamon sticks, cloves, ginger, nutmeg and pumpkin puree.
- Cook for 20 minutes over low heat.
- When the mixture has reduced well, remove from the heat and filter the syrup using a colander.
Pour the syrup into an airtight bottle and let it cool before closing.
- And there you have it, your pumpkin syrup is ready!

It will keep in an airtight bottle for about a month in the refrigerator.
