Saved by a Vegan Angel

Normally, I would be writing this post with a slight sense of melancholy being that it is Sunday evening and the hours of the weekend are quickly dwindling down. 


However, tonight, that is not the case. 


Tomorrow is a holiday for me and Toly.  Benefits of working for the government and for a bank.  It's actually nice that we always have the same holidays off. 


We have big plans for a trip to Ikea and Trader Joes to stock up and hopefully find some furnishing for our new home. 


This morning, I was hoping to sleep in, but sadly, I was awoken by a little brown nose staring me in the face. 


Sammy was not in the mood to sleep in I suppose so my plans when out the window. 


I had some extra time to think of breakfast and came up with a Blackberry Baked French Toast in my mind.  Unfortunately, when I got started on making it, I realized I had zero eggs.  Normally, this would be a problem, but I knew there was one person who would be able to save me. 


The queen of Vegan cooking herself, Sarah from Peas and Thank You is a domestic diva and true expert on vegan cooking.  She's so good in fact, that she is publishing her first Vegan cookbook soon.  I'll definitely be buying it and you should too! 


Sarah was able to give me some tips to salvage my french toast. 


Blackberry Baked French Toast (Vegan) 


4 Slices of Cinnamon Raisin Bread (I used Whole Wheat)
1/4 Cup Almond Milk
2 TBL Applesauce
1 TBL Flax mixed with 2 TBL warm water (this is the egg replacement) 
1 tsp Vanilla
Blackberries
Cube the bread and place in a coated baking pan.  Mix the wet ingredients and pour over the bread.  Place blackberries on top and bake at 350 for 20-25 min. 








I "un"veganized it by adding greek yogurt but it would have been just as wonderful without it.  I also made a quick blackberry glaze by melting a teaspoon of blackberry jam and drizzling it on top. 


This was awesome.  I didn't miss the egg one bit, nor could you tell that it was missing.  


Eggs were not missing from lunch however. 


After the gym this morning, I stopped into the store to pick up some eggs for lunch.  Apparently I had eggs on the mind when I realized I couldn't have them for breakfast. 


 Egg Sammies for lunch!



 2 Slices of Whole Wheat, Scrambled Egg, Spinach Hummus, Spinach, Avocado




After lunch, Toly and I had a few errands to run, one of which included picking out our mailbox.  I'm not sure why, but out of all of the decisions we've had to make for the house, this one seemed to be one of the more difficult ones.  We went to two stores and spent over an hour until we finally found one.



After errands and stopping by the house, we came home and hung out with my sister and Weston for awhile.  Such a nice surprise to come home to a sleeping baby. ;)



Lunch was great today, but Toly and I were both feeling hungry for dinner earlier than normal tonight.



When hunger strikes, I listen.



I'm trying to eat up the opened items at my parent's house because I don't want to have to take them to the new house.  I found some TJ's Butternut Squash Ravioli and decided it sounded good.  Especially when I realized there was a jar of Butternut Squash pasta sauce in the pantry.



Butternut Squash Ravioli with Butternut Squash Sauce, Spinach and Roasted Brussels Sprouts 




These ravioli are sooooo good!  Slightly sweet and nutty and I can detect the faint taste of cinnamon.  It was perfect with the sauce, which was a bit more savory.





On the side, I enjoyed some roasted broccoli and a slice of garlic bread. 


It's not even 7pm and we have the entire night.  A movie sounds good.  


I haven't been to Trader Joe's in awhile.  Are there any new products I should keep my eye out for?
