This is a truly simple and easy to make vegetarian dish thaty offers lots of flavour.

Pour the boiling water into a bowl. Add the potato powder, salt, pepper, and some nutmeg. Stir well and add the egg. Slowly add the flour until a dough has formed.
Take the dough out of the bowl and place it on a working surface, powdered with flour. Form finger thick rolls and cut gnocchi.
Bring salted water to boil for the gnocchi and non salted water in a second pot for the spinache.
Meanwhile prepare the sauce: Clean the spinache well and boil it for 3 minutes. Fry the onion in a pan with some oil. Add the garlic for a couple of minutes. Stir well, then aff the well drained spinach. Reduce the heat.
Put the gnocchi into the boiling water. When thez surface ler them boil for 3 more minutes. Then drain them and add them to the pan.
Crumble the Feta cheese into the pan and mix all well. Let the pan sit for a couple of minutes so the cheese can melt.
