Gnocchi with spinach and feta cheese

This is a truly simple and easy to make vegetarian dish thaty offers lots of flavour.

Ingredients

Number of serving: 4
1 pack of dried potato powder for puree

300 ml water

1 tea spoon salt

1 egg

6-8 soup spoons of flour


For the sauce :

300 g fresh spinach

200 g feta cheese

1 onion finely chopped

1 clove of garlic finely chopped

salt and fresh pepper

some olive oil to fry

Preparation

  • Pour the boiling water into a bowl. Add the potato powder, salt, pepper, and some nutmeg. Stir well and add the egg. Slowly add the flour until a dough has formed.
  • Take the dough out of the bowl and place it on a working surface, powdered with flour. Form finger thick rolls and cut gnocchi.
  • Bring salted water to boil for the gnocchi and non salted water in a second pot for the spinache.
  • Meanwhile prepare the sauce: Clean the spinache well and boil it for 3 minutes. Fry the onion in a pan with some oil. Add the garlic for a couple of minutes. Stir well, then aff the well drained spinach. Reduce the heat.
  • Put the gnocchi into the boiling water. When thez surface ler them boil for 3 more minutes. Then drain them and add them to the pan.
  • Crumble the Feta cheese into the pan and mix all well. Let the pan sit for a couple of minutes so the cheese can melt.
