Gnocchi with mushrooms, a tasty and easy meal

When temperatures drop, the best thing to do is to go home and prepare a good meal. We have found the perfect recipe for everyone: gnocchi with cream and mushrooms. A real treat to put in your fall/winter recipe book. We explain everything step by step below.

  • Fill a bowl with hot water and immerse the dehydrated mushrooms in it. Cover with a lid and let the mushrooms soak for at least 15 minutes.
  • Meanwhile, chop the garlic and fry it in a pan with a little olive oil.
  • Now drain the mushrooms and add them to the pan and cook for a couple of minutes on high heat. Then incorporate the soy cream and chopped parsley. Season with salt and pepper and stir. Cook the sauce for 7 to 8 minutes over medium heat, stirring frequently.
  • Cook the potato gnocchi in boiling water according to the instructions. Then drain them and toss them in the pan with the sauce.
  • Serve and sprinkle with chopped parsley. The mushroom gnocchi are ready, enjoy!

Observations

Can I use fresh mushrooms?
Of course. Generally speaking, 0.5 oz (15 gr) of dried (or dehydrated) mushrooms are equivalent to 3.5 oz (100 gr) of fresh mushrooms. In this first course you will need to use about 7 oz (200 gr) fresh mushrooms (of course you will have to clean and slice them).

What can I use instead of soya cream?
In this recipe we have used a very mild cream, but you can easily use classic cooking cream. If you want to stay lactose-free, try rice cream.

Can I store gnocchi with mushrooms?
Yes. You can store the seasoned pasta in an airtight container in the fridge or cover the dish with cling film. Maximum 2 days in the fridge,

Which pasta format should I use for a mushroom sauce?
Instead of gnocchi you can use many other short pasta shapes: farfalle, rigatoni, pennette. Drain the pasta al dente and finish cooking it in the pan with the mushroom sauce.

Which mushrooms can I use?
We have used a mushroom mixture but you can also use only champignon mushrooms or only porcini mushrooms.
