I love eating Gnocchi and one of my falourite veggies is fresh spinache. Combining the two results in one of my favourite Gnocchi dishes. Freshly made Gnocchi with juicy spinache and melted Feta cheese are devine. This is a truly simple and easy to make vegetarian dish thaty offers lots of flavour.

Preparation time: 10 Minuten

Cooking time: 25 Minuten

Ingredients:


for the gnocchi
1 pack of dried potato powder for puree (110 gram)
300 ml water
1 tea spoon salt
1 egg
6-8 soup spoons of flour
for the sauce
300 gramm fresh spinach
200 gramm feta cheese
1 onion finely chopped
1 clove of garlic finely chopped
salt and fresh pepper
some olive oil to fry


Preparation of the gnocchi:
Pour the boiling water into a bowl. Add the potato powder, salt, pepper, and some nutmeg. Stir well and add the egg. Slowly add the flour until a dough has formed.

Take the dough out of the bowl and place it on a working surface, powdered with flour.

Form finger thick rolls and cut gnocchi. (cut roll every 2 cm)

Bring salted water to boil for the gnocchi and non salted water in a second pot for the spinache.

meanwhile prepare the sauce:
Clean the spinache well and boil it for 3 minutes.

Fry the onion in a pan with some oil. Add the garlic for a couple of minutes. Stir well, then aff the well drained spinach. Reduce the heat.

Put the gnocchi into the boiling water. When thez surface ler them boil for 3 more minutes. Then drain them and add them to the pan.

Crumble the Feta cheese into the pan and mix all well. Let the pan sit for a couple of minutes so the cheese can melt.

Add salt and pepper and serve.
