Simple carrot cookies recipe
This carrot cookies are moist and crunchy! Simple to do, you just throw all the ingredients into a food processor and drop the batter onto baking sheets… and the result is a “How did you make them?” from everybody that served them. Butter makes them moist, carrots add nice color, walnuts gives them a crunchy texture and the flavour of cinnamon (you can also add ginger) completes them.
Ingredients: 1 cup softened butter (room temperature) 1 1/2 cups granulated sugar 2-3 teaspoons cinnamon 1/4 teaspoon baking soda 2 eggs 1 tablespoon vanilla 2 1/2 cups all purpose flour 2 cups shredded carrots 1 cup walnuts, lightly pan roasted and chopped pinch of salt In a large bowl, using an electric mixer, beat butter and sugar until well mixed. Lower the electric mixer speed and in three additions add: sugar and vanilla, all dry ingredients (baking soda, flour, salt) carrots. Mix well between additions. Manually add walnuts and stir gently.
Drop one tablespoon batter 2 inches (5 cm) apart onto the prepared baking sheets.
Bake at 180°C/350°F for about 10-15 minutes, until the edges are lightly browned. Let them cool one minute on the pan, than transfer on wire rack.
