Vegan coral lentil and carrot patties
These patties are super easy to make and are made from legumes: coral lentils. Their orange color will add vibrancy to your plate and pair perfectly with carrots. A great way to incorporate vegetables and plant-based proteins into your meal. Naturally gluten-free, this recipe is also perfect for vegetarian/vegan diets. Feel free to make them smaller for appetizers.

Cut your onion into pieces and sauté it in a pan with 1 tablespoon of olive oil.
Add the peeled and sliced carrots. Cover with water and let simmer for 15-20 minutes (until the vegetables are tender).
Drain if necessary and set aside.Cook the coral lentils in a pot of water for about 20-25 minutes.
Preheat your oven to 200°C (400°F).In a blender, add the carrots, onion, coral lentils, lemon juice, garlic cloves, spices, salt, pepper, 1 tablespoon of olive oil, and half of the oat flakes.
Once the mixture has turned into a paste, place it in a bowl and add the remaining oat flakes. Mix well.
Add the chopped coriander. Mix again.
If the mixture seems too liquid, feel free to add more oat flakes.On a baking sheet lined with parchment paper, form patties.
Here we used a cookie cutter, but you can also just form balls with the mixture and flatten them once placed on the baking sheet.Bake for 20-25 minutes.
And there you have it, your patties are ready! Feel free to make a sauce to accompany them.
Here, we mixed yogurt, lemon juice, and some herbs.
Observations
Spices: Feel free to vary the flavors by modifying them (cumin, curry, Espelette pepper, nutmeg, ginger...)
