SOYBEAN CUTLET
INGREDIENTS:
Soybean:3/4cup(soaked in water for 5-6hrs) Meat masala:1 1/4tsp Paprika powder:1/2tsp(or more as per taste) Coriander powder:1/4tsp Black pepper powder:1/4tsp Garam masala:2pinch Finely chopped onion:1 Finely chopped green chillies:2-3 Finely chopped ginger :1tsp Finely chooped garlic:1tsp Curry leaves:a few Crushed cashew nuts:4tbs Lemon juice:3tbs Chopped parsley:1 1/4cup Salt,to taste Oil :1tbs+for deep frying All purpose flour:2-3tbs Crushed corn flakes,as regrd for coating the cutlets METHOD: Wash&put the soybean in a pressure cooker with 1/4cup water&enough salt. Cook on high heat for 1 whistle then reduce heat &cook on simmer for 15min.Remove from heat&allow it to cool normally. Place them in a food processor&process until smooth,keep aside. Heat 1tbs oli in a pan.Add onion,ginger,garlic,curry leaves&saute until transparent. Add all the spice powders&saute for a few seconds until the raw smell disappears. Let it cool&then add soy beans,parsly,cashew powder&lemon juice,mix well.(chk 4 salt&add if needed) Divide this dough into small portions&shape them into cutlets. Prepare a thin batter with all purpose flour&enough salt. Dip cutlets in this batter&then roll in crushed cornflakes. Deep fry in medium hot oil till golden brown n crisp.
