  • Lactose-free custard flan - Preparation step 1Line the bottom of the pan with baking paper and grease the edges.
  • Lactose-free custard flan - Preparation step 2Cut a circle in the puff pastry the size of the mold and place it in the bottom of the mould.
  • Lactose-free custard flan - Preparation step 3Cut 1.5 inches-wide strips from the remaining puff pastry roll and place them on the edges of the mould, overlapping by 0.4 inches at the join where 2 strips meet.
    Set the mould and puff pastry aside in the freezer.

Which milk to use?

We've used soya milk, but you can use any plant-based milk to suit your tastes.

Which liquid cream to choose?

You need a cream with enough fat to obtain a creamy flan. Minimum 15% fat and ideally 30% fat. We used soy cream, but you can find 30% lactose-free liquid creams that will be perfect.
