Spanish Fritata #2 - My children call it vegetables in disguise!
I often make fritata, it is a great throw-together-in-a-flash meal and if you play your cards right, you are guaranteed a meal so packed with flavors and textures that it needs very little else, in fact if you have little individual pans, you can save up on dish washing time too, because everyone can eat straight from their pans. I am fortunate, because my children love most vegetables, but if you have a picky eater in the family.....
you might have to tweak the recipe somewhat to suit your family's taste. The Spanish Fritata with Exotic Mushrooms I made last year went down a treat with my family, so I knew I could try my luck again, this time however I really wanted some Spanish flavors with smoky roasted peppers, onions, green olives, potatoes and some intense sun dried tomatoes. My hubby and children loved it, but halfway through his meal my son said: "Mom, there are an awful lot of vegetables disguised in here." I guess I overplayed my hand a bit. Speaking of disguise, just a quick thought! I have been wondering lately......here in the blogger sphere, we all lead such perfect lives. We all have fully stocked and fully equipped kitchens, very appreciative and supportive husbands and families. We all have above average food budgets, extravagant holidays, we only eat at very expensive restaurants and only drink designer drinks and so we live in this perfectly manicured world. I can't however help to wonder, if life here in the blogger sphere is really as perfect as we make it out to be. How far from the reality is this persona or image that you have created on the Internet. All the bloggers that I have met, are honest, beautiful, but real people with real families and pretty normal lives, but I do read blogs where things are just a bit to perfect. Last year, I met a lady through a food blog and she was leading this awesome life in NYC with "her bloke". I was so envious of here and we even shared the occasional email. Then one day she dropped the bomb, she and "the bloke" was no more, her blog is no more and I have not seen or heard from her since..... I was just sad to think that her persona on the Internet was so perfect and yet in real life it wasn't. I guess, I just want to say that, with me, what you see or read is what you get and if ever I can be of help to anybody, it would be my pleasure. We are "connected" whether we want to believe it or not! Enough of being so deep, back to the recipe... Spanish Fritata #2 Ingredients 1 large onion - sliced thinly 1 can of sliced roasted red peppers - mine was an import from Spain(you can make your own) 2 wheels of feta 10 baby potatoes - cooked ½ cup sun dried tomatoes in oil - chopped fresh parsley ½ cup stuffed green olives salt/black pepper vegetable oil smoked red bell pepper flakes - use smoked paprika if you cannot find the red bell pepper flakes. 8 eggs - beaten with about 100ml milk Heat the oil in an oven proof skillet. Saute the onions with the smoked red bell pepper flakes until the onions are soft. Add the potatoes and sun dried tomatoes and allow potatoes to brown slightly. Beat the eggs and milk and pour over the vegetables. Season with salt and pepper. Gently lay the slices of pepper all around the skillet and crumble the feta over the top. Place the olives into the egg mixture and pop into the oven for about 5-10 minutes or until the eggs are set. Garnish with chopped parsley. Of course, Monday would not be Monday without a meatless meal, so this is perfect for Meatless Monday! Last week I got into some trouble for using crayfish in a meatless dish, so I hope I have redeemed myself with this recipe. Have a lovely week everybody!!
