Spanish Pancake , Devilled Fish & Honey Sesame Prawns
Spanish Pancake ( Yellow, red and green peppers add color to this pancake ) Serves : 4 Time required : 35 minutes Ingredients 50 g red pepper 50 g yellow pepper 50 g green pepper 1 ( 50 g ) mango 4 eggs Salt and white pepper powder to taste A few drops of capsico sauce 50 ml cream 100 g flour 100 g corn flour 3 green chillies , chopped 100 g butter 200 ml tomato - chilli sauce ( mix 100 ml tomato ketchup, 100 ml hot chilli - garlic sauce and a few drops of capsico sauce ) Method Chop all peppers and tomato finely. Beat the eggs , salt , white pepper powder and capsico sauce well. Add cream and beat lightly. Sieve flour and corn flour together and fold into the egg mixture to a smooth batter. Add peppers, tomato and green chillies, mix well. Heat a non stick frying pan, add a little butter and a spoonful of the egg mixture. Cook on a low heat till done on both sides. Cut into eight triangular pieces and serve hot with tomato chilli sauce. Nutritional value of each serving : 613. 3 kcal Proteins : 21. 9 g Fat : 38. 2 g Carbohydrates : 45. 4 g Devilled Fish ( Fillets of pomfret topped with seasoned tomato sauce ) Serves : 4 Time required : 35 minutes Ingredients 2 pomfrets Salt and pepper powder to taste 1 tablespoon ( 15 g ) crushed peppercorns 50 ml oil Juice of 1 lemon 10 g garlic flakes , chopped fine 3 spring onions, chopped fine 1 stick celery , chopped 1 spring leek , chopped fine 1 ( 40 g ) carrots, cut into cubes 100 ml tomato sauce 25 ml cream 4 tablespoon ( 60 g ) flour Method Fillet the pomfret and wash in salted water. Marinate the fish fillets with salt , pepper powder, half of the crushed peppercorns, oil and lemon juice for 30 minutes. To prepare the sauce : Heat oil in a saucepan and saute chopped garlic , spring onion , celery, leeks, carrot and remaining crushed peppercorns for five minutes . Add tomato sauce and seasoning. Stir well and cook till done. Finish with cream . Keep the sauce aside. Final procedure : Roll the fish fillets in flour, seasoned with salt and pepper and grill till done. Arrange the fillet in a plate and pour the devilled sauce over. Serve hot with grilled tomato , sauteed vegetables, baked potato and parsley. Serve hot. Nutritional value of each serving : 514 . 9 kcal Proteins : 54. 9 g Fat : 15. 4 g Carbohydrates : 29. 1 g Honey Sesame Prawns ( Prawns with honey and sesame dressing served on a bed of Chinese Salad ) Serves : 4 Time required : 30 minutes Ingredients 20 medium sized prawns , cleaned and deveined Salt and pepper to taste Juice of 2 lemons 30 ml water Cooking oil A few drops of capsico sauce 100 ml honey 30 g jaggery , crumbled 10 g sesame seeds 2 tablespoon ( 30 g ) corn flour 100 g crispy noodles 200 g Chinese Salad For the Chinese Salad : 50 g cabbage 50 g carrot 50 g spring onion 50 g radish Salt and pepper to taste 2 tablespoon ( 30 ml ) oil 1 teaspoon ( 5 g ) chilli powder Cut vegetables into juliennes and mix with seasoning. Method Shell the prawns , but retain the tail . Marinate the prawns with salt , pepper , lemon juice, 50 ml oil and capsico sauce for 10 minutes. Heat oil in a pan and saute the prawns lightly. Add 30 ml water and cook till done. Add honey , jaggery , seasoning and sesame seeds. Dissolve corn flour in a little water to a smooth paste and add to the pan. Cook till done and the sauce thickens. Serve hot , garnished with grilled tomato , spring of parsley , accompanied by crispy noodles and Chinese salad .
