Spicy Orange Glazed Skirt Steak Lettuce Wraps

1 lb skirt steak
1/3 cup orange juice
1/8 tsp crystallized ginger, minced
1 tsp honey
1 tsp red pepper flakes
1 clove of garlic, minced
1/2 tsp cilantro
salt to taste
1/8 tsp black pepper
4 lettuce leaves
sliced scallion for garnish

Mix together everything but the steak in a plastic zipper bag, put aside half. Stab the steak all over with a fork on both sides and then put it in the bag with half the marinade. Let it marinate for a couple hours in the fridge or about a half hour at room temperature. Remove the steak and pat it dry with some paper towels. Heat a couple tbls of oil in a skillet on high and sear the steak on both sides until there is only a minute or so until it's done how you like. Turn the heat down to medium, pour the reserved marinade over it and flip it several times to coat. Let it sit until finished cooking, flipping it again before you remove it to make sure it's coated. Let rest for 3-4 minutes and slice thin, against the grain. Wrap several pieces of steak in a lettuce leaf with some scallion.

I had a pound of skirt steak in the freezer from the last time I bought some and I decided to make something with it. I just kind of whipped this up and it turned out really well. I love that. I had some fancy pants orange juice that my girlfriend had bought, which was for the best since it's the major flavor in the marinade. A lesser juice wouldn't have been nearly as good. Fresh would have been ideal, of course, but you work with what you have.

So I marinated the steak up and seared it. Once it was almost cooked I poured in some reserved marinade and flipped it a couple times to coat. The glaze wound up getting pretty dark, next time I'm going to reduce the heat more I think. I was feeling healthy so I made some lettuce wraps with it, plus I had some scallion that I tossed in there for good measure. It was wicked good, I'm glad I wrote down what I was doing (for once) when I was making the marinade.Who out there has done lettuce wraps before? This was actually my first time, it was a nice change of pace.
