Tiffany Fruit Cake
Tiffany Fruit Cake Ingredients 250 g cashew nuts 250 g walnut halves 2/3 cup mixed peel 1 cup stoned dates 1/2 cup raisins 1 cup red and green cherries 1/3 cup glace ginger 3/4 cup plain flour 1/2 teaspoon baking powder 3 tablespoon cocoa 2/3 cup castor sugar 3 eggs 1 teaspoon vanilla essence Method Line a buttered loaf pan ( approximately 22 cm X 14 cm ) with heavy greaseproof paper. Butter paper well. Put the fruits and nuts in a large bowl. Reserve some fruits and nuts for top. Sift together flour, baking powder, cocoa and sugar; add to the fruit - nut mixture and mix well. Add beaten egg and vanilla essence.
Pour mixture into greased loaf pan. Top with reserved fruits and nuts. Bake at 180 * C or 350 * F for 1- 1 1/2 hours. Cool 1/2 hour in tin. Remove paper. To store, wrap in foil in the refrigerator. related searches : Tiffany
