Tomato and anchovy pasta sauce, with tomato salad…then a juicy Mango..

By What I Had For Dinner Tonight (Visit website)

I have been looking forward to an evening all by myself, and the oppo finally presented itself this evening…the start of the bank holiday having been signalled by the cascade of dogs and cats at exactly5pm…with the next good weather forecast for Tuesday at 9 am !! Oh well, welcome to England.

After all the exertion of the past few days, I wanted a quiet evening infront of the telly, a little food experimentation with 2 ingredients I have for some time felt would go together…. Tomatoes and anchovies…. Something simple, no meat and with a good kick.

This morning – always try and make a pasta sauce in the morning, so it has time to meld – I cooked some baby tomatoes in olive oil, added a whole tin of anchovies, obscene amounts of garlic (only sleeping with my teddy - Labipuppipoo – tonight!) and it sat til this evening. Some experimentation, eh…think I’ll apply to design the next particle smasheroonie thing that whizzes around Geneva!! :-)

Twas amazing. Pungent, strong and full of taste. I had it with a tomato salad with a yoghurt and horseradish sauce, some flakes of cheddar cheese and some fresh chives from my garden (Es el, please note !!) that are just flowering too

I went to Lidl this morning with Jimmy – we bumped into his parents and I joked to them that “my boyfriend and I always come shopping on a Friday morning” which I think alarmed them just a little – where I found some ripe mangoes, one of which I had this evening,  just with some fresh lime juice squeezed over. Lovely…. fresh.

Accompanied was a few glasses of tap-water and a cappucino or two is yet to come. There was bugger all on TV tonight until Caroline phone up and authorised me to watch some programme about someone called Hugh Masakela immediately…and then threatened me with excommunication when I had to admit I had never heard of him….well, sod it…she’s never heard of Wassisname Rossini ! Go on, watch this…I nearly wet my bokkers laughing…
