Top 3 in Chef2Chef recipe Challenge!

Good Morning/Afternoon/or Evening!!!!  I am so excited to share with you my wonderful news….  Are you ready?


WELL, I never win anything, seriously!  Then the other day my dear friend Lindsay from DesignerWife sent me a message.  She said, “You won something on KludgyMom’s Back to Blogging Challenge.”  Of course I got all excited and screamed.  I did win a beautiful handmade scarf, and a wonderful journal.



I have to share with you, since I never win anything, second and third place to me is also winners.  My husband definitely feels differently, but he understands me after 16 years.


I decided to share my Quinoa cookie recipe in a recipe challenge.  There is four rounds to this challenge, in each round a winner wins a Kitchen Aid Mixer-  my dream kitchen equipment.  My mother-in-law let me use her beautiful electrical mixer, it is 40 years old.



Chef2Chef.net are the wonderful people doing the recipe challenge.  I love following them on Twitter, and Facebook!  The first round is a cookie recipe challenge.  Guess what!?!?  I made the Top 3, I really did!!

The quinoa cookies are so much fun to make, and can be a vegan cookie.  I did not use eggs or butter in them.  Here is the recipe for them:


Butterscotch and Craisin Quinoa Cookies


1/3 of a cup of safflower oil


1/2 cup of pure cane sugar


1/2 cup brown sugar


2 teaspoons vanilla


1 Tbsp ground flax seed


3 Tbsp almond milk


3/4 cup of Quinoa


1/2 cup of rolled oats


1 cup of all purpose flour


1/2 tsp baking soda


1/2 tsp baking powder


1/4 tsp salt


1/2 cup craisins


1 cup butterscotch chips


1.       Grind up quinoa in blender.  Next grind up rolled oats in blender.  Mix together quinoa, rolled oats, flour, baking soda, baking powder, and salt in bowl.


2.       In separate bowl mix together safflower oil, sugars. Add flax seed, almond milk and vanilla.


3.       Add dry ingredients to wet ingredients slowly, may need a tablespoon of almond milk if too dry.


4.       Add in butterscotch chips and craisins, mix well.


5.       Drop a heaping Tsp of batter on greased baking sheet.


Bake for 8-10 minutes, I did less to make them soft and chewy. Can make about 30 cookies.


In this picture I added chocolate chips to the recipe.  So have fun with the recipe, and enjoy!


The next round is Halloween Candy, the recipes were submitted on 10/22!  I made Peanut Butter Banana Boo Cups, I will share the recipe next week. Keep your fingers crossed for me, I dream about that Kitchen Aid Mixer!
