Veggie Lasagna Recipe
I was off work yesterday so I decided to make up a few lasagnas for dinner and to bring to work today.
I like to make individual lasagnas. You can use little ramekins like (these) or the pyrex glass bowls like I do. I love doing individual lasagnas. I can specialize them for each member of the family (hubby gets meat and onions, I get veggies) This is me sharing my recipe (P.S. I don't really use measurements. Take this recipe as a guide): The "Cheese": Take about a half a block of tofu and add a bunch of Italian seasoning. Or use individual seasonings like oregano, parsley, basil, rosemary and garlic. I also add a BUNCH of red pepper flakes but that's just me. Smoosh it with a fork or your hands until all the spices are incorporated and it looks all crumbly like feta cheese. Taste away... add more garlic powder or rosemary or whatever you like!! Noodles: Boil about 8 lasagna noodles. I like whole wheat pasta but use what you like. When you set them aside spray or smear them with olive oil or they will all stick together. Not cool. The Veggies: Grill up a bunch of your favs..... I put a dab of EVOO in the pan and throw in about 4 garlic cloves. Then I use a mandoline to slice zuchinni and squash. Throw those in with whatever other veggies you can find in the frigde. Remember to add them in the order they will cook. Carrots and broccoli go in.... then a little while later squash and mushroom. If I use spinach that goes LAST. The Sauce: Use what you like. I make a fab sauce if (I say so myself) but you can totally use jar sauce. Use whatever you and your family like! Here's a picture of everything all ready to go. Assembly: Simply stack each thing in the bowls in layers. Sauce "Cheese" Noodles Veggies Sauce And so on.... Here's a picture of the first layer: ![]() All Done! ![]() Side View! YUM!!!!!!!! ![]() Cover with foil and pop them in the oven at 350 for 45-55 minutes (depending on how bubbly you like it). Refrigerate for a few days or freeze for a few weeks. ![]() Then, simply re-heat at work the next day in the microwave for about 2 minutes. ![]() Wouldn't you rather eat THIS over a TV dinner?!?! ![]() So while I was away from my blog I was thinking about expanding it to more recipes and the "how to" part of packing delicious, nutritious, vegetarian and vegan meals.
