Wicked Cheap Wednesday - oops Thursday - Baked Cod!
I'm back, and have much more energy - always seems to happen towards the end of the week, and maybe that Diet Coke I just had helped! I won't be cooking again until Sunday, so I'll be posting about some other stuff, but just wanted to tell you tonight about what I made for our WCW last night - baked cod! So easy, and so cheap!
Preheat oven to 400. For the cod, I bought fresh, thin (probably about 3 inches wide and almost a foot long) cod pieces (2 of them). I mixed together bread crumbs, grated parmesan cheese, paprika, and Odobo seasoning - mostly bread crumbs, with tbsps of the other stuff just until it looked like enough - I know Melissa will be so proud of me for "eying" the recipe rather than following each measurement exactly:) I also mixed together some white wine and lemon juice. I dipped each cod piece into and thru the liquid, and then into the breadcrumb mixture. Spray 9x13 baking pan with Pam spray and place each cod piece in the pan. Bake for 25 minutes, or until fish is crispy and flakes easily. While this was baking, I put together a salad and some Green Giant frozen rice pilaf. Once the cod finished, I turned the oven down to 375 and made some Stop and Shop brand crescent rolls while the fish cooled. Oh, and I heated up some Campbell's clam chowder on medium low heat on the stovetop. Quite the filling, but yummy meal! I had planned to have this Friday (Lent = need more seafood recipes!) And cheap! Cod - .75 lbs = $4.00 Green Giant frozen rice pilaf - on sale, as usual, for $1.25 Campbell's clam chowder - on sale = $2.00 Crescent rolls = $2.00 Everything else (bread crumbs, lemon juice, WINE, etc), we already had = $9.25!!! The other ingredients are items I always have on hand. Sometimes, it's so easy to look at what you have, throw it together, and have a great and inexpensive meal at home! Like I said, no more cooking until Sunday for me, but I'll posting other stuff. Tonight I'm wondering, what seafood recipes do you make a lot during Lent?? Also, does anyone else watch High School Reunion on TVLand - love that show! And, I don't have many, but here are some pictures from Croptopia last weekend - highly recommended! I am going to try this weekend to get some pictures taken of the pages I made so I can share them with you:) Check out Melissa's page for her pics too! my wine glass - note the C so we would know who's glass belonged to who - great idea, ladies!
