Baked eggs with mushrooms: a perfect Christmas starter without breaking the bank
Here's a simple, warm and accessible dish - just what we need when December gets hectic between shopping, preparations and New Year's Eve toasts.
Baked eggs with mushrooms is the ideal starter if you're looking for something gourmet, easy, quick and compatible with a tight budget. And the icing on the cake: you can easily make it a little more "festive" to suit your tastes.
The classic recipe calls for very few ingredients: eggs, a little cream, pan-fried mushrooms, a little garlic or shallot... and in less than 30 minutes, you've got a comforting, warm and tasty starter.
Recipe:
Ingredients (for 4 ramekins)
- 10.5 oz mushrooms (in this case button mushrooms)
- 1 tablespoon butter
- 1 shallot
- 1 clove garlic
- parsley
- 4 eggs
- 3/4 cup liquid cream
- Salt
- Pepper
Preparation
- Clean the mushrooms and chop finely.
- In a frying pan, sauté the shallot and garlic in a little butter. Add the mushrooms and cook until they release their water and start to brown.
- Preheat oven to 350°F/180°C. Butter individual ramekins.
- Divide the mushrooms between the ramekins, pour in a little cream and crack an egg on top. Season with salt and pepper.
- Place the ramekins in an ovenproof dish, pour in hot water halfway up (bain-marie), then bake for approx. 12-15 minutes (the white should be just set, the yolk still melting).
- Remove from oven and sprinkle with parsley or fresh herbs. Serve immediately with mouillettes or toasted bread.
For a "more festive" or "gourmet" version
If you want to elevate the dish a little to fit perfectly into a Christmas menu, here are a few ideas:
- Replace the classic mushrooms with a forest mix or chanterelles and porcini mushrooms, for a woodier, more festive taste.
- Add a little grated cheese (Gruyère, Comté, Parmigiano) before baking for a gratin-like texture.
- For added refinement, drizzle truffle oil or truffle shavings over the egg just before serving.
- Serve in elegant individual mini-ramekins, with toasted farmhouse bread or mouillettes, the visual is everything ;)
