Halloween Red Velvet: the spectacular cake that makes an instant impression
Looking for THE cake that’ll raise a few eyebrows when dessert rolls around? We think we’ve found just the thing for you ;)) With its red layers, white frosting, and raspberry coulis dripping down the sides, this special Halloween Red Velvet cake is the epitome of a spectacular dessert. Yes, it takes a little more preparation than a simple cake… but the result is definitely worth it if you want to put a real “wow” dessert right in the middle of the table.

Why this cake is such a hit for Halloween

The Red Velvet cake already has a serious advantage: its red color practically does all the decorating on its own. No need to add ten sugar figurines or kilos of fondant to convey the theme.

The white frosting creates a sharp contrast with the red interior, while the raspberry coulis adds the finishing touch as it drips down the sides. And to take the presentation to the next level, the recipe even suggests sticking a large knife in the center of the cake.

Needless to say, when it comes time to serve it, no one should have to ask what the party’s theme is ;-)

The real secret: get started the day before

We’d rather warn you: this isn’t a dessert you should start making an hour before your guests arrive! The sponge cakes need to cool completely before assembly, and the recipe even recommends letting them rest in the refrigerator overnight.

And actually, that’s pretty good news. You can prepare the layers the day before, wrap them separately, and then save the assembly and decoration for the next day.

If you’re really short on time, letting them rest for a few hours is still an option, but the colder the sponge cakes are, the easier they’ll be to trim and stack neatly.

Three layers to make a tall cake

Another impressive feature of this Red Velvet cake is its height. The batter is divided among three 15-cm pans to create three even cake layers.

Only have one pan? Don’t worry—you’ll just need to bake in several batches. Once the sponge cakes have cooled, trim off the domed tops to make the layers as flat as possible.

Next, alternate layers of sponge cake and buttercream before completely covering the cake. Take your time with this step: the smoother the sides are, the more the red coulis will stand out when you decorate it.

Try the Halloween-themed Red Velvet

At this point, you can see more clearly why this cake works so well for Halloween: the color, the height, and the contrast between the white frosting and the red do almost all the work.

If you'd like to make it at home, here's the Ptitchef version with all the steps for assembly and decoration.

The raspberry sauce is almost the entire decoration

And here’s the good news: after all that prep work, the final decoration is really simple. Just pour some raspberry coulis on top and let it drip naturally over the edges.

There’s no need for every drip to be identical—quite the opposite! It’s precisely the uneven effect that creates this slightly dramatic look—perfect for Halloween.

You can keep it simple like this or add a few decorations around the cake. But honestly, between the red, the white, and the dripping sauce, it’s more than enough on its own.

Can it be prepared entirely in advance?

Yes, and we recommend this even if you’re hosting a large gathering. Once assembled, the cake can be stored in the refrigerator until it’s time for dessert.

According to the Ptitchef recipe, it will keep for up to 3 days in the refrigerator in an airtight container or under a glass dome. It can also be frozen, preferably in individual portions so you can thaw only what you need.

Our tip for Halloween? Prepare the sponge cakes the day before, assemble the cake on the day of, and save the coulis for last. That way, you’ll have a spectacular dessert without having to do everything at the last minute.
