The perfect chocolate mousse exists (with a hint of salt!)

Chocolate mousse, the kind you dip into with a spoon and a child's eyes, still holds a special place in our hearts... and stomachs. And here we bring you the perfect version. Ultra gourmet, with just the right amount of salt to make the flavors explode. Yes, that little salty twist changes everything, and we'll tell you why!


The secret? A well-placed pinch of salt

It may come as a surprise. But this grain of salt, added at just the right moment, doesn't make the mousse salty. Instead, it awakens the chocolate flavors. It's subtle, but that's what makes this mousse stand out from the crowd! :)


Ingredients:

  • 5 oz dark chocolate
  • 1.7 oz semi salted butter
  • 1 egg yolk
  • 4 egg whites
  • 1 pinch salt
1 pinch fleur de sel/kosher salt (optional)

Whisk the egg whites until frothy, add a pinch of salt and whisk again until stiff.

Melt the dark chocolate and half-salt butter in a water-bath or in the microwave.

Add the egg yolk to the chocolate and melted butter mixture.

Gently fold in the stiffly beaten egg whites using a spatula.

Pour the chocolate mousse into ramekins. Chill for at least 3 hours.

*We've been generous here, filling 3 ramekins, but you could just as easily make 6.

And voilà, the mousses are ready! You can add fleur de sel on top for even more deliciousness!
