- Panettone mold 6 inches/16 cm diameter and 4 inches/11 cm high

Ingredients for the panettone
For the panettone:
- 0.8 lb flour
- a pinch of salt
- 1 Tbsp fresh yeast
- 1/3 cup warm water
- 1/3 cup warm milk
- 1 egg
- 2 egg yolks
- 2 oz brown sugar
- 4 oz softened butter
- 3.5 oz chocolate chips
- 0.5 oz melted butter
For the topping:
- 3.5 oz chocolate
- 1 Tbsp butter
- chocolate chips
Preparation
- In a kneader, knead the flour and the salt. Mix together the fresh yeast with the warm milk and the warm water. Add this mix to the flour and salt and knead during 1 minute.
- Add the egg while kneading then cover with a kitchen towel and leave to rest 30 minutes.
- Add the egg yolks, the brown sugar and the soft butter gradually. Knead 5 minutes. Cover with plastic foil and leave to rest 2 hours.
- Incorporate the chocolate chips into the dough.
- Pour the dough in a buttered panettone mold and leave to rest 1 hour. Make a cross on top and brush the top with melted butter.
- Put it in the oven at 350°F/180°C during 40 minutes.
- Leave to cool. Melt the chocolate and the butter then coat the top of the panettone. Sprinkle with chocolate chips.
- There you are, your panettone with chocolate is ready.
