Ingredients for 4 people :
- 14 oz carrots
- olive oil
- 3 cloves of garlic
- 1 aromatic bouquet (or 2 bay leaves)
- salt
- pepper
Sauce:
- 2 clementines
- 1 oz unsalted butter
- 1 tbsp honey
- 1 tbsp red wine vinegar
- salt
- pepper
Utensils required :
- Knife
- Baking dish
- Cutting boards
- Wooden spoons
- Aluminum foil
Step-by-step preparation :
- Preparation and heating
Preheat the oven to 350°F/180°C and wash the carrots.
- Create the accordion effect
Place a carrot between 2 planks (or 2 wooden spoons) and make fine incisions without cutting all the way through.
- Prepare the mold
Grease the mold, then place carrots, garlic, aromatic bouquet, salt and pepper.
- Bake in the oven
Cover with aluminum foil and bake for 1 hour. Remove foil, stir and bake uncovered for a further 20 minutes.
- Prepare the sauce
Grate clementines, extract juice and melt butter. Combine zest, juice, butter, honey and vinegar in a bowl. Season with salt and pepper, then mix.
- Finishing touch
Pour the sauce over the carrots and bake for a further 15 minutes, until golden brown. And that's it!
