Looking for an original and delicious snack or dessert that doesn't involve frying in oil? These Air Fryer churros will transport you straight to Spain! Imagine a churro dough that's crispy on the outside and soft on the inside, rolled in sugar, and all without oil. A delight to be enjoyed warm, with chocolate sauce or caramel, a real snack treat :-)

Ingredients

Dough:

• 1 cup water
• 1/2 cup butter
• 1 tablespoon brown sugar
• 2 Tbsp sugar
• 1 pinch salt
• 1+1/3 cup flour
• 1 tsp vanilla extract
• 3 eggs

Coating:

• 1 Tbsp vegetable oil (spray, +/-)
• 1 Tbsp sugar
• 1 Tbsp brown sugar
• 1 tsp cinnamon (optional)

Chocolate sauce (ganache):

• 1/2 cup liquid cream 30% fat
• 3.5 oz dark chocolate

Materials

• Saucepan
• Whisk
• Wooden spoon
• Piping bag / cut up freezer bag
• Nozzle
• Parchment paper (optional)

Preparation

• Pour the water into a saucepan. Add white sugar, brown sugar, salt and butter. Wait for the water to boil; the butter should melt completely. Stir if necessary.
• Remove from heat and add flour all at once. Mix well to incorporate.
• Return to the heat and stir with a wooden spoon until the dough pulls away from the edges.
• Add the vanilla extract, then the eggs: add them 1 at a time, incorporating them well into the dough each time.
• Transfer the still-warm pastry to a pastry bag fitted with a fluted tip.
• Apply oil with your spray onto sheets of parchment paper suitable for the tray of your air fryer.
  Shape churros on the parchment paper: poach straight, well-spaced lines (the churros will puff up).
  *You can place them in a cool place so that the dough sets and they keep their shape.
• Spray churros again with oil. Bake churros for 12 minutes at 390°F/200°C in "Air Fry" mode.
  
  * You can flip them halfway through cooking. Extend cooking time if necessary.
• Cook a little longer if necessary, then roll the churros in a mixture of sugar and brown sugar.
  
  For the ganache, heat the cream, add the chocolate in small pieces and stir until smooth.
• It's ready! Enjoy it hot!

Observations

How to store churros?
Store in an airtight box and keep for up to 2 days at room temperature or 3 to 4 days in the fridge. You can also freeze them, but they will soften.

How do I reheat churros?
You can reheat them for a few minutes in the oven or air fryer. Remember to apply a little oil to them so that they are crisp again.

Which tip should I use to make churros?
You'll need a fluted tip, more or less wide depending on the desired size.

How do I get evenly fluted churros?
When you poach your churros on parchment paper, they'll flatten out underneath if you bake them directly. This is not a serious problem, but you can help them retain their shape by refrigerating them. The dough will set and they'll keep their shape.

How do I get the sugar to adhere better to the churros?
Apply a little oil spray at the end of baking and roll them in sugar immediately.
